Application
Enzyme preparations. Primarily used for beer antifreeze (hydrolyzing proteins in beer to prevent turbidity after refrigeration), meat tenderization (hydrolyzing muscle and collagen proteins to tenderize meat), precooking of grains, and the production of hydrolyzed proteins. Its applications in beer antifreeze and meat tenderization are far more extensive than those of other proteases. The typical dosage is 1–4 mg/kg.
