Application
α-Galactosidase has a wide range of applications in the food industry, where it can hydrolyse galactosides to release galactose and glycosidic ligands. During food processing, α-galactosidase can be used to improve the taste, quality and nutritional value of food. For example, in some pulses, vegetables and fruits, there are high levels of galactosides which contribute to the bitter taste of the food. By adding α-galactosidase, these galactosides can be hydrolysed, thus eliminating the bitter taste and improving the quality of the food. In addition, α-galactosidase can also be used in the production of oligosaccharides, syrups and functional foods.
